Ratatouille

Ratatouille

This is a really delicious meal for using up abundant seasonal veg! We got a lot of marrow (over sized courgette) this year from family so wanted a way to use plenty up. The photos explain the method but feel free to change any ingredients if you don't have them. The first time I made it I didn't have garlic & aubergine & it was really tasty anyway, we even craved it the next day as it was so tasty! 

Ingredients
3 onions
1 aubergine
1 marrow
1 1/2 peppers
2-3 cloves garlic
1 tin chopped toms (or fresh)
4-5 tbsps sweet chilli sauce

Fry your veg separately in a pan for a few minutes per veg & add to a roasting tin. Then put it in a hot oven for about 40 mins. We just had some bread with it but you could do some dauphinoise potato or anything you fancy on the side. One tip would be to use plenty of veg as it does reduce in size when roasted!
